i can give you the yobbo perspective,
most 253's in good condition, say 3.08 diff1st gear burnout only
most 308's in same same, you will be able to snatch second and hold it there
also when some ricer punk and hit hot asian girlfriend pass you on the freeway at 100km, he is doing 110kmh, don't bother with a chase with a 253, you put your foot to the floor and all that happens is drop on your vaccume guage
were as a 308 will get up and boogie.
apart from that, there ain't too much between them for everyday driving

350's are cool,had one of those. Keith Black, I usually associate that name with a 4 sec 1/4 mile time, again very cool. It's been a few year's since I had a 5 litre, although the one I had was stroked amongst other thing's. The ricer's were never an issue when I took that one for a run.....lol.
